INGREDIENTS:
- 350g of your favourite pasta, we recommend spaghetti or bucatini
- 2 ripe avocados
- Juice of 1-2 lemons
- 1/2 cup fresh basil leaves
- 2-3 garlic cloves
- 1/4 cup extra virgin olive oil
- Salt and freshly cracked black pepper to taste
- Grated Parmesan cheese (optional)
METHOD:
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a food processor or blender, combine the avocados, lemon juice, basil leaves, garlic cloves, and extra virgin olive oil. Blend until smooth and creamy. Add salt and freshly cracked black pepper to taste.
- Toss the creamy avocado sauce with the cooked pasta until well combined.
- If desired, sprinkle with grated Parmesan cheese and additional cracked black pepper before serving.
Makes 3-4 servings.
